Craving something quick and easy when the sweet craving hits? No need to reach for something unhealthy and processed when you can make any of these paleo desserts in 30 minutes or less! You won’t even need to head to the grocery store because you will be surprised to see that you will more than likely have all the ingredients on hand.

I love making a single-serving dessert when I am cooking for one or even just for two. (No need to worry about the extra treats sitting around the house all week.)

I’ve included my three favorite Paleo Sweets recipes below that make for an incredible dessert, breakfast or quick snack on the go! Do you have a go-to single serving dessert recipe? I would love to know!

Single Lady Raw Cheesecake

½ cup cashews, soaked overnight OR soaked 30 minutes in boiling water
3 tbsp melted coconut oil
2 tbsp raw honey
1 tbsp lemon juice
½ tsp vanilla
⅛ tsp salt
⅓ cup chopped fresh strawberries, optional

Combine all ingredients in a food processor and process until smooth, stopping to scrape down the sides occasionally.
Pour the cheesecake filling into 1 extra large or 2-3 regular silicone muffin tins (or regular muffin tins lined with a paper liner or parchment paper).
Freeze 2-3 hours until set.
Allow the cheesecakes to sit out and soften 5-10 minutes before eating. Enjoy!

Mocha Chia Seed Pudding

1 ½ tbsp chia seeds
½ cup almond milk
¼ cup cold coffee (or replace with more almond milk)
1 ½ Tbsp cacao powder
1-2 tbsp maple syrup, to taste
½ tsp vanilla
¼ tsp salt
Combine all ingredients in a small jar – replace the lid and shake vigorously to combine.
Allow the pudding to set 1-2 hours in the fridge OR blend until smooth (this can also be made the evening before and left in the fridge overnight).
Chill until ready to eat – Enjoy!

Caramelized Split Banana

2 tbsp coconut oil
3 Tbsp nut butter (I love @eatnuttzo peanut-free blend)
1 tbsp Cacao nibs
2 tbsp chopped pecans or other nuts
¼ tsp cinnamon
1 Tbsp maple syrup
Coconut yogurt, optional

Slice the banana in half from end to end
Fry banana in coconut oil over medium-low heat until golden – about 5 minutes.
Transfer the softened banana to a plate – drizzle with nut butter and maple syrup and sprinkle with remaining toppings
