This refreshing salad is simple to make and will quench your hunger on a hot summer’s day. The fresh herbs give a lovely, light flavor that enhances the dish while also boosting your body’s detoxing capabilities.

Mediterranean Cucumber Salad

8 Persian cucumbers
3 Tbsp minced red onion
1 cup chopped parsley (about 1 small bunch)
3 Tbsp minced fresh dill
Cherry or grape tomatoes, quartered

2 Tbsp caper berries + juice
Juice and zest of 1 lemon
¼ cup olive oil

Sea salt, to taste

 

Method

  1. Quarter the cucumbers lengthwise and chop. Place the chopped cucumber in a large mixing bowl and add the onion and herbs.
  2. Blend capers with lemon juice and olive oil until completely blended (some pieces of caper left are okay). Pour the dressing over the cucumbers and mix to combine all ingredients.
  3. Season with salt to taste.
  4. Plate the salad and top with the cherry tomatoes before serving. Enjoy!
