This refreshing salad is simple to make and will quench your hunger on a hot summer’s day. The fresh herbs give a lovely, light flavor that enhances the dish while also boosting your body’s detoxing capabilities.
Mediterranean Cucumber Salad
8 Persian cucumbers
3 Tbsp minced red onion
1 cup chopped parsley (about 1 small bunch)
3 Tbsp minced fresh dill
Cherry or grape tomatoes, quartered
2 Tbsp caper berries + juice
Juice and zest of 1 lemon
¼ cup olive oil
Sea salt, to taste
- Quarter the cucumbers lengthwise and chop. Place the chopped cucumber in a large mixing bowl and add the onion and herbs.
- Blend capers with lemon juice and olive oil until completely blended (some pieces of caper left are okay). Pour the dressing over the cucumbers and mix to combine all ingredients.
- Season with salt to taste.
- Plate the salad and top with the cherry tomatoes before serving. Enjoy!
