1 medium yellow onion
1 lb broccoli florets
3 tbsp ghee, for cooking
2 cloves garlic, crushed
1 1/2 Tbsp curry powder
1 quart chicken bone broth
3/4 cup full-fat coconut milk
Salt and pepper to taste


  1. Heat the ghee in a medium saucepan over medium heat.
  2. Add the onion and sauce until tender, stirring occasionally, about 5 minutes.
  3. Add the curry powder and cook to release the oils, stirring occasionally, about 2-3 minutes.
  4. Add the garlic, broth, and broccoli and cook uncovered* until the broccoli is tender.
  5. Transfer the mixture to a blender, add the coconut milk and salt and blend until smooth. Add water if desired, for a thinner texture. Serve hot and enjoy
