Every year fall rolls around I am anxiously waiting to get my hands on all types of squash especially butternut squash! Full of fiber, potassium and magnesium, squash might be one of the most nutritional and fulfilling vegetables we have. It’s super versatile in that it’s great in both sweet and savory dishes (even sneaking it into places you wouldn’t even realize squash could go!)

This is not just your average roasted butternut squash recipe that settles as a side dish. I’ve taken it a step further and made a complete meal that is both savory as it is sweet and filling. Stuffed with ground meat, added vegetables, sweet bites of pomegranate and roasted pecans this is a great meal to make ahead of time and eat throughout the week.

Southern Sweet Pepper Jelly

Growing up in the South, pepper jelly with cream cheese and crackers was definitely a thing – you’d undoubtedly find it somewhere on the table at any holiday party, church picnic, or family reunion. But of course it was loaded with refined sugar and artificial coloring to make it thick and *bright* green so when I found myself with a surplus of peppers this summer I decided to whip up a healthy, honey sweetened alternative to the stuff I knew in my childhood! Not only is it a fun throwback, but canning them was a great way for me to use all the peppers I had without any of them going bad!

Are you anything like me when that sweet craving hits you’re instantly searching for a recipe that is quick and easy? No need to reach for something unhealthy and processed when you can make any of these paleo sweets desserts in 30 minutes or less! Even as a paleo baker, you might think I have desserts around all the time but I promise you that is very unlikely. Ignore the fact that it looks like a lot of instructions because I promise you, this recipe is super easy to make! Plus, there’s are ZERO ingredients that you’ll be unsure about and have to search 3 different health food stores to find. (Seriously, when that happens, just hop on Amazon and you’ll find it in 10 seconds flat!) You probably have half the ingredients already, and the other half can be found at any local grocery store!
