Paleo Single Serving Desserts

Are you anything like me when that sweet craving hits you’re instantly searching for a recipe that is quick and easy? No need to reach for something unhealthy and processed when you can make any of these paleo single serving desserts in 30 minutes or less! 

Even as a paleo baker, you might think I have desserts around all the time but I promise you that is very unlikely. Hence why I developed these three single serving desserts so I don’t feel guilty wasting any, and don’t find myself overindulging!

I love making paleo single serving desserts when I am cooking for one or even just for two. You’ll most likely be surprised that you won’t even need to head to the grocery store because most of the ingredients will likely be in your pantry.

I’ve included my top three favorite Paleo Single Serving Desserts recipes below that make for an incredible dessert, breakfast or quick snack on the go! All paleo-friendly, vegan and grain-free! Do you have a go-to paleo single serving dessert recipe? I would love to know!

Paleo Single Serving Desserts: Single Lady Raw Cheesecake

SINGLE LADY RAW CHEESECAKE

Ingredients

Scale

1/2 cup cashews, soaked overnight OR soaked 30 minutes in boiling water
3 tbsp melted coconut oil
2 tbsp raw honey
1 tbsp lemon juice
1/2 tsp vanilla
1/8 tsp salt
1/3 cup chopped fresh strawberries, optional


Instructions

  1. Combine all ingredients in a food processor and process until smooth, stopping to scrape down the sides occasionally.
  2. Pour the cheesecake filling into 1 extra large or 2-3 regular silicone muffin tins (or regular muffin tins lined with a paper liner or parchment paper).
  3. Freeze 2-3 hours until set.
  4. Allow the cheesecakes to sit out and soften 5-10 minutes before eating. Enjoy!

Paleo Single Serving Desserts: Mocha Chia Seed Pudding

MOCHA CHIA SEED PUDDING

Ingredients

Scale

1 1/2 tbsp chia seeds
1/2 cup almond milk
1/4 cup cold coffee (or replace with more almond milk)
1 1/2 Tbsp cacao powder
1-2 tbsp maple syrup, to taste
1/2 tsp vanilla
1/4 tsp salt


Instructions

  1. Combine all ingredients in a small jar – replace the lid and shake vigorously to combine.
  2. Allow the pudding to set 1-2 hours in the fridge OR blend until smooth.
  3. Chill until ready to eat – Enjoy!

Notes

This recipe can also be made the evening before and left in the fridge overnight.

Paleo Single Serving Desserts: Banana Split

CARAMELIZED SPLIT BANANA

Ingredients

Scale

2 tbsp coconut oil
3 Tbsp nut butter (I love @eatnuttzo peanut-free blend)
1 tbsp Cacao nibs
2 tbsp chopped pecans or other nuts
1/4 tsp cinnamon
1 Tbsp maple syrup
Coconut yogurt, optional


Instructions

  1. Slice the banana in half from end to end.
  2. Fry banana in coconut oil over medium-low heat until golden – about 5 minutes.
  3. Transfer the softened banana to a plate – drizzle with nut butter and maple syrup and sprinkle with remaining toppings.
  4. Enjoy!
