Making your own sweet potato ravioli can take some patience since we create them one at a time, but it can also be a fun project with kiddos that like to be in the kitchen!
After cutting the noodles width-wise into 2-inch strips:
- Use a spoon or pastry brush to brush a noodle strip with a little water
- Scoop 1 tsp of filling into the center of it
- Carefully fold the noodle strip in half and firmly pinch the top to seal it
- Pinch the bottom corners shut and work your way up the sides to seal the ravioli
- Repeat with all remaining noodles strips!
For me, potatoes are also on my list of favorite comfort foods, so it’s just a bonus that they are also healthy and so versatile (check out my Stuffed Breakfast Sweet Potatoes next!) The benefits of sweet potatoes are well-known and plentiful. You can tell from their color that they’re a great source of beta carotene, the plant version of vitamin A, which is important for healthy skin and eyes. They’re also an excellent source of fiber, which has a ton of gut-related health benefits. Cooking the potatoes actually makes it easier for your body to absorb the vitamin.
