Sweet Potato Ravioli

Every night is pasta night in my house! Well maybe not every night but most nights, especially if it’s paleo! One of the most challenging things about going grain-free is finding alternatives that both taste great and have a familiar texture …but this sweet potato ravioli is about as close to the ‘real deal’ as you’re gonna get 😋

Pasta is one of those comfort foods that everyone can definitely miss once transitioning to a Paleo lifestyle but they won’t have to miss it for long, not if you have Cappello’s on hand. They really know how to do gluten free, grain free right and without further adieu, I present to you this savory and sweet Sweet Potato Ravioli recipe that will make your senses dance!

Making your own sweet potato ravioli can take some patience since we create them one at a time, but it can also be a fun project with kiddos that like to be in the kitchen!

After cutting the noodles width-wise into 2-inch strips:

  • Use a spoon or pastry brush to brush a noodle strip with a little water
  • Scoop 1 tsp of filling into the center of it
  • Carefully fold the noodle strip in half and firmly pinch the top to seal it
  • Pinch the bottom corners shut and work your way up the sides to seal the ravioli
  • Repeat with all remaining noodles strips!

The benefits of sweet potatoes are well-known and plentiful. You can tell from their color that they’re a great source of beta carotene, the plant version of vitamin A, which is important for healthy skin and eyes. They’re also an excellent source of fiber, which has a ton of gut-related health benefits. Cooking the potatoes actually makes it easier for your body to absorb the vitamin.

Sweet Potato Ravioli

Sweet Potato Ravioli with Rosemary Brown Butter


  • Yield: 3-4 servings (30-35 ravioli) 1x

Ingredients

Scale

1–2 tbsp avocado oil, for sauteing

1 package Cappello’s lasagna noodles, room temperature

6 Tbsp grass fed butter

1 large sprig of rosemary

Salt, to taste (or use salted butter)

Filling

3/4 cup baked sweet potato, lightly mashed

1/4 tsp salt

3 tbsp full fat coconut milk

1/8 tsp nutmeg

1 large shallot, sliced

1 clove garlic, crushed and minced


Instructions

  1. Heat the avocado oil in a small frying pan over medium-low heat.
  2. Add the shallot and saute until tender, 3-5 minutes. As the shallot gets closer to being done, add the garlic so it cooks down a bit but doesn’t burn.
  3. Combine all filling ingredients in food processor and process until smooth. Transfer the filling mixture to a small bowl and set it aside.
  4. Remove the lasagna noodles from the package and stack them flat.
  5. Cut the noodles width-wise into 2-inch strips and set them to the side.
  6. Working 1-2 at a time, use a spoon or pastry brush to brush a noodle strip with a little water, then scoop 1 tsp of filling into the center of it. Carefully fold the noodle strip in half and firmly pinch the top to seal it. Then pinch the bottom corners shut and work your way up the sides to seal the ravioli. Repeat with all remaining noodles strips. Set the prepared ravioli aside when you’re done.
  7. To prepare the brown butter sauce, heat the butter in a small frying pan over medium. Add the rosemary sprig and saute until the butter is fragrant and begins to brown. Add the salt to taste and set aside.
  8. Finally, let’s cook the ravioli. Heat a large pot of water to boil. Working in batches add the ravioli to the boiling water and cook for 2 minutes or until done. Remove the cooked ravioli from the water and plate, and repeat with the remaining ones.
  9. When all the ravioli are cooked drizzle the warm butter over it and enjoy!
